I’ve tired myself of committing to unreasonable, unachievable New Year’s resolutions. I mean, really, a resolution is simply a form of convincing yourself you’re going to commit to some modified behavior you will most likely detest. And there are just some things I’m not willing to part with….like enchiladas.
How can one Texan surrender to the restaurant that serves piping hot enchiladas on a “be careful; the plate is hot”? So… I’m going to compromise with myself. I’ll allow that once in a while tradition of consuming massive amounts and chips and salsa, along with margaritas and cerveza to exist, but I’ll just do it at home. So here’s the result. Quite tasty, easy to make and ever so satisfying.
