Leek, Artichoke and Carrot Soup

January reminds me that I need to think about detoxifying my body. Oh there’s so many “plans” to follow–The Master Cleanse, The Epsom Salt Cleanse, and on and on. None which sound too healthy. I remembered reading Mireille Guiliano’s best-seller “French Women Don’t Get Fat” and recalled a leek soup recipe she shared, noting that all French women use this detox soup at least twice a year. She called it “Magical”.

I was curious as to what made it so “magical” and upon reading the ingredients, I noticed it consisted of leeks and water; maybe some olive oil or lemon juice, but basically leeks and water in exchange for food–but only for two days.

Since I couldn’t force myself not to chew for two days and I wasn’t really in the detox mood, I decided to spin a recipe that had minimal ingredients, but nutrients and minerals. This is what I came up with and it’s pretty darn good!
