Amazingly versatile, roasted corn and green chiles pairs well with ham, barbecue or Mexican cuisine-think fajitas or tamales! This dish is really good and guys love it! Triple the recipe!

  • 2 cups organic, non-GMO corn drained
  • 4 oz. green chiles
  • 4 oz. cream cheese softened to room temp
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 cup Parmesan cheese shredded
  • salt and pepper to taste
  1. Prep corn: corn in a paper towel and squeeze excess water from corn
  2. In a dry, heavy bottom skillet (preferably cast iron) turn heat to medium high
  3. Add corn in an even layer; allow to roast for about 3 minutes then stir and flatten corn in a single layer; allow to roast 3 minutes; repeat this process until corn begins to turn golden brown
  4. While corn is roasting, add cayenne pepper, ground cumin and salt
  5. Remove from heat; add in green chiles and softened Neufchatel cheese; stir until combined
  6. Preheat broiler
  7. Top with Parmesan cheese; skillet in broiler until Parmesan cheese has melted

  8. Garnish with smokey paprika or green onions

  • This impressive dish can be served as a dip or side dish; it goes great with Beef Fajitas, barbecue ribs or ham
  • If you prefer a less dense dish, add ½ cup sour cream
