Roasted Corn and Green Chiles

  • 2 cups organic, non-GMO corn, frozen or canned
  • 4 oz. mild chopped green chiles, drained
  • 4 oz. Neufchatel or cream cheese, room temperature
  • ½ cup parmesan cheese, grated
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground cumin
  • pinch of salt to taste


  1. Prep corn: corn in a paper towel and squeeze excess water from corn
  2. In a dry, heavy bottom skillet (preferably cast iron) turn heat to medium high
  3. Add corn in an even layer; allow to roast for about 3 minutes then stir and flatten corn in a single layer; allow to roast 3 minutes; repeat this process until corn begins to turn golden brown
  4. While corn is roasting, add cayenne pepper, ground cumin and salt
  5. Remove from heat; add in green chiles and softened Neufchatel cheese; stir until combined
  6. Preheat broiler
  7. Top with parmesan cheese; skillet in broiler until parmesan cheese has melted
  8. Garnish with smokey paprika or green onions

Recipe Notes

This impressive dish can be served as a dip or side dish; it goes great with Beef Fajitas, barbeque ribs or ham

If you prefer a less dense dish, add ½ sour cream
