Chioggia beet

Candy stripe beets are formally called Chioggia beets. When sliced, they are red and white striped and have a sweeter taste than the red, golden or white beet. The Chioggia beet hails from Chioggia, Italy and can be found in most specialty supermarkets.beet salad

It’s important that a variety of pigments of food are included in the diet. Each pigment of food has specific benefits and, when combined with other pigments, the vitamins and nutrients work synergistically, resulting in a balanced, nutritional diet. The four food pigments are chlorophyll (green), carotenoids (orange), anthoxanthins (yellow/white) and anthocyanins (red, purple). This recipe provides three out of four of the pigments, plus healthy fats from the hazelnuts.


  • 2 medium red beets
  • 1 medium Chioggia beet
  • 1 orange
  • 1 bag pre-washed arugula
  • 1/2 red onion (sliced)
  • 1/2 cup dry roasted hazelnuts (course chopped)
  • 1/2 cup crumbled feta cheese
  • 2T white raspberry balsamic vinegar
  • 2T malt or red wine vinegar
  • 1 T  sugar
  • salt and pepper to taste


  1. Preheat oven to 400 degrees
  2. Wash and cut the ends of the beets (removing greens and stems)
  3. Wrap whole beets in foil; bake 45 minutes; allow to cool
  4. Peel orange and slice into segments
  5. Slice red onion
  6. Place orange segments and red onions in bowl; add balsamic vinegar
  7. Combine and chill in refrigerator for 10 minutes
  8. Remove peel and slice cooled beets
  9. In a saucepan, add sliced beets, sugar and vinegar
  10. Simmer and stir occasionally until sugar is dissolved
  11. Place warm beets in a bowl and allow to cool
  12. Plate arugula
  13. Arrange beets, oranges and red onions atop arugula
  14. Add hazelnuts and feta cheese
  15. Drizzle remaining white raspberry balsamic vinegar over salad

    I never know what to do with beets except borsch. This is a great recipe, very nice and tasty. Here in Sicily we only get steamed beets, the fresh ones are hard to find.

      Thank you!!! Steamed beets ? Toss them in and olive oil and sprinkle with fresh thyme! Roast them a bit then enjoy! Thank you for your comment!!! You’re in Sicily? I want to visit there!!!!!
